Ingredients

• 500g pork belly
• 2 cups Shaoxing rice wine (see note 1)
• 1 tablespoon light soy sauce
• 2 teaspoons dark soy sauce
• 5 slices ginger
• 2 star-anise
• 1 bay leaf
• 2 dry chilli (optional)
• 1 tablespoon rock sugar (or granulated sugar)
